Each kitchen states what it can clear in orders per hour, and the quote a guest sees comes from that — per kitchen, not a hall-wide guess. Buzzers and “Ready — buzzer 97 called” are one tap.
Survives the wifi the hall actually has
Every action on the board is saved on the device before it is sent; a drop mid-rush comes back exactly where it was. (The till itself cannot complete a sale offline — said here because it is true.)
