A rota per kitchen, against that kitchen’s sales

Each kitchen writes its own rota and sees labour as a share of its own forecast — not the hall’s. The hall’s own staff (cleaners, runners, the bar if the hall runs it) are simply another team with the same tools.

Clocking in that stands up per business

Staff clock in on the till or their own phone, with a photo on every punch if their employer asks for one, into their own employer’s records. Timesheets, holiday accrual and working-time checks all run per kitchen, because that is who employs them.

Permissions that match the roof

A vendor’s manager manages that vendor. Hall staff see hall things. The lock model decides which settings the hall sets for everyone and which each kitchen keeps — deliberately, visibly, per setting.

Cover that respects the counter

Cover offers are judged by role, so the person picking up a shift on the grill can actually work a grill — and staff ask for cover from their own phone.
