Forty dishes are forty margins. A restaurant that knows them per dish prunes the menu with evidence instead of memory.
Theoretical against actual
Recipes say what the GP should be; stocktakes say what it was. The gap between the two numbers — theft, waste, over-portioning, a lying recipe — is the most useful number in the building.
A stocktake with an identity
Counts are dated documents, not overwrites, so this month reconciles against last month and the variance has a history.
Supplier prices move; your margins move with them
Prices typed once or photographed off an invoice. When beef rises, every dish carrying beef shows its new margin the same day — and the honest ? marks any dish not yet costed rather than pretending.

A dish switched off leaves the till, the QR page and the kiosk within seconds, and stays off until somebody says otherwise — with a morning reset rule so yesterday’s 86 does not survive the prep.
